Yeah, but there are different categories of leftover shits - you have those pig snouts and ears and stuff that you put in your divenica sausage, and you have the guts and grit and all the undescribable stuff that you throw away when you dismember a pig. You know, there's a reason why our region is the poorest in whole Europe... But that's different story.
The thing is, there might be a butcher somewhere in my town, but I don't know where.
And if there is, the conditions will be disgusting, so I prefer the crap from the supermarket. Lesser of two evils, right?

Oi. And what does it say, the label, where is the meat from?
I saw in our Interspar (when I was getting my Zwilling J.A. Henckels knife ) that meat there is from Romania, Bulgaria and some small portions were from Czech republic ( man, how I didn't know how to write correctly "Czech" now. It took me some 3-4 times!!).
Luckily I am blessed with a great butcher in my neighborhood with farms just a bit outside Zagreb. I really donno where I would buy meat if he wasn't there.
I mean, I'm shitting, I would probably buy in Supa Markets or some other domestic "butcher shop" that imports meat and would be satisfied with it, but this really is a blessing.

Told me? I saw it with my own eyes I was talking about that stuff that went in a wheelbarrow and got thrown somewhere in the backgarden.

Damn... I'd go crazy. That supermarket meat (fruits and veggies too) makes me sick. I have a marketplace some 500 meters away from my appartment and I purchase most of my food there. Meat (I was so lucky there, the woman that works in a butchershop has a son who is in the same kindergarden group with my son, and they are best friends ), chicken, sausages, eggs, mushrooms, vegetables, wine, rakija, fruit, dairy, bread... I'm going to that same marketplace most of Saturday and Sunday mornings for years now, and I figured out the best vendors for each food group. Created a nice seller-customer relationship up to the point that they warn me if some of their products are not fresh so they recommend me something else. I think it really makes a big difference in health and, more important, taste, and it's worth the effort. So I suggest you take some time and find some quality food supply channels, you won't be sorry

I say again! Me throw something?! The pigs we slaughtered and took their inner parts out were for sale the other day. If you don't remember, only the liver was saved for them. We fried our liver ( "we fried our liver" ) that morning, but we cooked all inner parts for great many hours, chopped them to bits and stuffed them into "tlacenica".
So...Me? throw away?!

Dammit If I must draw a picture here, I was not talking about liver, heart and other tasty organs, I was talking about snout, guts, stomach, bladder, gristle and other stuff that's usually classified as "inedible" - until the meat industry put it in your industrial hotdogs, that is

First I shortly fried some beef cut up in cubes, then a shitload of onions in the same pan to collect all the juices. I covered the meat with onions, added bayleafs, spices and dried plums, and covered all of it with some squeezed orange juice and two bottles of Leffe Brune. Baked it about 2 hours and served with palenta made with homemade corn flour (ground old way in a fucking watermill ) with sun dried tomatoes... It was awesome. Sticky, rich and tasty as hell










Also, some usual calzone with cheese/ham/sun dried tomatoes and olives form dinner

i'm not sure about the plums but it looks very good

I always add dried plums (or some other dried fruit - cranberries or raisins) in my beef or wild game stew-like dishes, it totally upgrades the taste I usually add something acidic (wine or vinegar) or bitter (dark beer), in both cases sweet dried fruit serve as a perfect counter-taste And in case that someone doesn't like them, they can avoid them and transfer them to my plate - I won't have any objections

BTW, when you have fried chicken breast, try eating it with some cranberry jam - it's an awesome combo
