That looks really nice. I can even taste how the cheese eases the burn from the chili. And I really like the contrast in the colors (maybe, `coz that's the Bulgarian Flag ), that sure makes me want to eat more of it.

I wouldn't go that far, it'd be wrong to say that the cheese "eased" the heat.... I would say that, at certain moments, the heat was controllable (the rest of the moments were pure fucking hell)

Saturday was like:



Sunday was bacon and onions and gnollies fried chicken on the mountain Ze?jak.

Today was like:



Chicken burger with onions, garlic, parsley and cheese, fried on pigs fat (as were the fries) and on it added a few cuts of freshly picked habanero

I was just looking how my dried nagas are getting along. I'm going to slaughter me some pigsboy on 19th so I am hoping to have gridded nagas for sausages this year
If not, I'll just wait until they dry, grind them and try and get some fresh meat from butcher's shop...I only don't know where to smoke-dry sausages then I mean, sure, they will be ok never the less, but everything is better when it has some smoke flavor on it

Think I'll go in another direction. I tried (still trying) to make chili sauce.
Here are the ingredients:

Chopped carrots, onions, paprika, garlic.


Dry hot pepper (lot's of it), tomato paste, spice mixture for grilled meat (I thought it would go nice in here)


Mince meat + boiled beans, honey, salt pepper...

Here's how I've done it:
Mix the minced meat and the tomato paste.


Than add the hot pepper, and chopped veggies, and then the beans.


Finally add water and leave it on slow fire (I'm thinking about 2-3:30 hours).



I'm also making the veggie soup and the meat loaf from the first post of this page.


Later on, I'll post pictures of the finished dishes.

Made beans on the right down is a pot with beans in the boiling water, on the left is onions, garlic and carrots on pigs fat, and up left is vegetables, bacon skin, some bones and stuff for boiling to let the taste out, but not to be in the final made.



Main starts: bacon and smoked ham



After 2 hours of cooking, mixing all the ingredients in one pot, and adding some sausages, salt, pepper and other spices we get this: Big pot is normal beans and in smaller pot is for me, with pickled habanero. Home grown, I have to say.



And this is the final result, and I have to say that my face melted. I really had trouble with that one habanero. As gnollie also noticed, fuckers are hotter then naga. But the taste of them is excellent

So basically, you cover the greased pot with sliced boiled potatoes, you cover it with fried minced meat and onions, and on top you add slices of previously panned and fried eggplant. Then you mix some double cream, sour cream and eggs and you pour that all over your casserole, put it in the oven until golden and... yummy
